Yield: 3 servings
- 2 leeks
- 2 celery stalks
- 2 zucchini
- 12 broccoli florets
- 2 big handfuls spinach leaves
- 3 vegetable stock cubes (no msg!)
- Salt and pepper to taste
1. Chop all vegetables except for spinach, and then toss all vegetables into a large pot with 2 tablespoons vegetable oil. Simmer for 15 minutes until tender, stirring occasionally.
2. Dissolve vegetable cubes in hot water on stove. Combine the broth and veggies and blend.
