Spinach and Shrimp Salad


Great for lunch and dinner.

Yield: 1 serving

Ingredients:

  • 2 cups spinach, rinsed
  • 1/8 medium red onion, thinly sliced
  • 1 cup cherry tomatoes, diced
  • Shrimp
  • 1 lemon
  • Salt and pepper to taste

Directions:

  1. Preheat grill on low heat.
  2. Rinse shrimp then sprinkle with salt and pepper and place shrimp on skewer.
  3. Dice onion and tomatoes.
  4. Mix spinach, onions and tomatoes.
  5. Place shrimp on grill for 1-2 minutes, turning every 30 seconds.
  6. Place shrimp on top of salad.
  7. Use Lékué Citrus Sprayer to spray lemon on salad, or squeeze lemon on salad as desired.
  8. Salt and pepper to taste.
